This Masala Corn Chaat is a North Indian street style spicy chaat recipe that will arouse all your taste glands. This soul satiating chaat is made with golden corn kernels, onion, tomatoes, green chilies, lemon juice, cilantro, and some spices.

 The great thing about this chaat is that you can easily adjust the spiciness according to your taste buds. 

Sweet corn chaat is ready in under 15 minutes when you have to boil corn, and it can come together in just 2 minutes if you have boiled corn and veggies ready! 

Unlike other chaat recipes, this Masala Corn Chaat recipe doesn’t have chutneys in it. It is loaded with Indo-Italian flavors. This chaat is a mélange of Indian spices with Italian herbs and red pepper flakes.

It is a spicy, tangy, and slightly sweet chaat that is so full of tantalizing flavorings. Making this street-style chaat at home is very easy.

This can be served as a snack or brunch or tea time snack. This sweet corn chaat also makes a nice snack for guests along with some tea/coffee. And it is gastronomic enough to be served as an appetizer or starter with some cocktail/mocktail at your dinner parties.

Indian chaats are always bursting with astounding flavors and textures, and that’s the reason they are adored by people of all age groups. My favourite chaats are chips chaat, Avocado Chaat, Aloo Tikki Chaat, dahi vada, and Bread Chaat, palak patta chaat, chole tikki chaat, samosa chaat, and pakora chaat.

I have used frozen corn kernels for this recipe, but this can also be made using fresh sweet corn or corn on the cob. It can also be turned into a kid-friendly snack when made without fresh chili and chili powder.

Sweet corn is a versatile ingredient and other than devouring it in a charred roasted form, it is widely used in Indian recipes such as corn pakora, corn cheese toast, corn pulav, grated corn stir fry, mushroom pepper corn masala, and many more.

Corn Chaat Ingredients

To make an Indian street style Masala Corn Chaat recipe at home, you will need some simple ingredients. These ingredients are:

  • Sweet corn: I have used frozen corn kernels, but you can also use fresh sweet corn or corn on the cob. My freezer always has frozen corn kernels, so using them is more convenient for me. 

  • Onion: Like any other Indian chaat, freshly chopped onions are essential in this recipe. I have used purple onions, but you can also use yellow onions.

  • Tomatoes: Tomatoes add nice flesh and juicy flavors to this chaat. So using ripe and juicy tomatoes gives the best result.

  • Green chilies: Chopped green chilies, add a nice pungent heat to this corn chaat recipe. However, adding green chili is completely optional.

  • Herbs: I have used chopped cilantro (coriander leaves) in this chaat recipe, but since this chaat is full of Indian Italian flavors, you can also use chopped basil or chopped parsley in this recipe. 

  • Butter: Adding a tablespoon of butter to the hot boiled corn kernels give this chaat a creamy taste. Use vegan butter if you are making vegan chaat.

  • Sauce: Traditional Chaats have a combination of chutneys. But for this chaat I have used sweet chili sauce. You can also add some tomato ketchup here.

  • Spices: I have used turmeric powder, red chili powder, regular salt, chaat masala powder, black salt, roasted cumin powder, and Italian herbs.

  • Fresh Lemon Juice: You will need a drizzle of fresh lemon or lime juice to make this corn chaat tangy. 

How to make Corn Chaat?

Making corn chaat is very simple. This is how it is done in 5 simple steps:

Step 1: Boil corn kernels with turmeric powder and salt. 

Step 2: Drain all the water and mix boiled corn with butter.

Step 3: Add onion, tomato, green chili, coriander leaves, sauce, and spices. 

Step 4: Mix everything until combined and drizzle with lemon juice.

Step 5: Mix again and serve immediately.

Variations:

Roasted Corn Chaat:

To make this Roasted Corn Chaat, you need to swap boiled corn with charred corn. To roast, place corn cob directly over the fire and trim off the corn kernels. Your smoky charred sweet corn is ready for chaat.

Steamed Masala Corn Chaat: 

If you don’t want to boil corn then you can also steam them in a steamer or a pressure cooker. To steam, place the sweet corn in a steamer basket and steam until they are tender and soft. You can now use this steamed corn for making corn chaat.

Serving Suggestions

This sweet corn chaat can be served as a tea-time snack, as an appetizer, or starter. It tastes great when it is served with some fresh juice, tea, or coffee.

Tips and tricks to make your best Corn Chaat

  1. For making Masala Corn Chaat, you can use fresh or frozen corn kernels. 

  2. Sauté: If you are using tender sweet corn, then instead of boiling, sauté them with butter for 2 minutes with a nice buttery aftertaste.

  3. Chutneys: To make this chaat in Indian flavors, skip adding ketchup and add tamarind chutney and mint coriander chutney.

  4. You can also make Corn Chaat Cheese by adding grated cheese to this chaat.

  5. Vegetables: You can also add more vegetables like colored bell pepper, boiled green peas, grated carrots, grated boiled beetroot to this sweet corn chaat. You can also add boiled and diced potatoes to make Corn Aloo Chaat.

  6. Cheese: To make this chaat rich in protein, you can add grilled paneer, or grilled halloumi to this delicious chaat recipe.

  7. Chilli: Adding chili powder and green chili is optional. So if you don’t want hot-tasting chaat, then skip red chili powder and green chilies.

  8. Spices: Feel free to adjust the number of spice powders as per your liking.

  9. Turmeric & salt: Boiling corn in salt and turmeric powder gives them a nice yellow hue and salty flavor. 

  10. Sweetener: If the sweet corn you are using is not sweet, then add 1/2 teaspoon of sugar while boiling. This would add a nice sweetness to the corn.

  11. Italian flavoring: I have used Italian mixed herbs and red pepper flakes in this recipe, but if you only want Indian flavors then omit adding them both.

  12. Toppings: I didn’t use any toppings in this chaat. If you wish to add more texture and crunch, then you can top this chaat with pomegranate arils, sev, aloo bhujia, or even mixture namkeen.

Can I store corn chaat?

This chaat or masala corn tastes best when it is consumed fresh. It releases juices and loose zest if you store it. You can gather all the ingredients, and do the chopping ahead of time. But only assemble chaat when you are planning to serve. 

Is corn chaat vegan?

No, this chaat recipe uses 1 tablespoon of butter so it is not vegan. To make it vegan either use vegan butter or skip adding butter.

Can I pressure cook sweet corn?

Yes, you can surely pressure cook sweet corn. To pressure cook, add 2 cups corn kernels or 2 large-sized corn cobs to a pressure cooker. Also add 3 cups of water, 1/4 teaspoon turmeric (optional), and some salt. 

Cover the cooker with the lid and pressure for 2 whistles or till they are tender. Let the pressure cool off completely before opening the lid. Drain the water, and your boiled corn kernels are ready to use.

How to make Corn Chaat

  1. Add 4 cups of hot water to a saucepan. Alternatively, you can use regular water and boil it over medium heat. Then add 2 cups of sweet corn, turmeric powder, sugar to a saucepan and mix well.

  3. Let it boil for 3-4 minutes or until corn is soft and tender. After boiling, the yellow color of corn will become a shiny darker version of yellow. To check the doneness, take out some corn in a ladle or spatula and press it between thumb and index finger if the corn kernel is tender popped it is ready.

  5. When the corn is cooked, drain the water using a colander or strainer. After that, add the hot boiled corn to a mixing bowl.

  7. While the corn is hot, add the butter and mix well until the butter is melted.

  9. Now add chopped onions, chopped tomatoes, chopped green chilies, chopped cilantro, sweet chili sauce, red chili powder, salt to taste, black salt, roasted cumin powder, chaat masala powder, Italian herbs, and red pepper flakes.

  • 1 green chili, finely chopped (optional)
  • 1 tablespoon chopped cilantro (coriander leaves)
  • 1 tablespoon sweet chili sauce or tomato ketchup
  • 1/4 teaspoon red chili powder or as required
  • Salt, to taste
  • 1 teaspoon chaat masala or amchur powder
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon black salt
  • 1/2 teaspoon oregano or Italian herbs (optional)
  • 1/4 teaspoon chili flakes (optional)
  • 1 or 2 teaspoons fresh lemon juice, or to taste

  • Chopped cilantro leaves for garnishing

How to make Corn Chaat
